Skillet meals are my go-to for quick, easy dinners when we are busy. You can combining quality pantry and fridge items with fresh produce to make a meal everyone will love, plus skillet meals are so easy to clean up. With the holidays over everyone is back to work/school/activities and our schedules are filling up fast.
The kid only has 1 semester of high school left so we are counting down to graduation. Between school, his new job and spending time with his friends it feels like we rarely see him anymore. It blows my mind he is so grown up and on the verge of starting his own life away from us.
As parents we spend years taking care of our children, worrying about them, hoping they are safe and happy. Then all of a sudden you turn around and those little kids aren’t so little anymore. And you realize the years of fixing boo-boos, kissing away tears and cheering them on was the easy part. Now we have to trust they can take care of themselves.

It in a world full of drive-thrus, take out and fast food I get concerned about the food choices the kid is faced with. It helps to know he can cook simple dishes like this Italian Chicken and Spinach Pasta Skillet for himself once he is out on his own. For the last several years I encouraged him to spend time in the kitchen, learning basic cooking skills.

- 2 tablespoons extra virgin olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 14-ounce can Italian diced tomatoes
- ¼ cup Italian salad dressing
- ¼ teaspoon red pepper flake
- 2 cups chicken stock
- 12 ounces frozen cooked chicken
- 8 ounces penne pasta
- 6 ounces fresh spinach
- Heat a large cast iron skillet over medium heat.
- Add oil, onions and peppers. Cook 3-4 minutes.
- Stir in tomatoes, dressing, and red pepper flake simmer 3-4 minutes.
- Mix in stock, chicken and pasta.
- Bring to a low boil. Cover, reduce heat to low and simmer 8 minutes.
- Stir in spinach and simmer 2-3 minutes.
- Salt and pepper to taste. Serve hot.
