Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 large eggs, lightly beaten
  • 1/4 cup vegetable oil
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 400°F. Place a 9-inch cast iron skillet in the oven to preheat.

  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, eggs, and vegetable oil.

  4. Add the wet ingredients to the dry ingredients and stir until just combined.

  5. Remove the skillet from the oven and add the butter. Swirl the skillet to coat with the melted butter.

  6. Pour the batter into the skillet, spreading it out evenly.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cornbread to cool for a few minutes before slicing and serving.
