I finally made it through the last several weeks of deadlines! There are still a few projects lingering around to wrap up, but overall I can relax a little bit. Which is great because it is Wine Wednesday and Paul is coming home right after work. Yay!
I have been craving a batch of Jalapeno Blood Orange Sangria but my wine would get lonely without a delicious snack to keep it company. So I whipped up this rich Chipotle Parmesan Spread with a few odds and ends out of the casa fridge.
My original plan was to smear it on flatbread and top with a few veggies but then I got distracted by all the other things I can make with it. Like baked oven fries, or roasted zucchini… Or how about on grilled chicken or a juicy steak? The options seem endless right now… In the end I topped a crostini with a smear of spread and grilled asparagus.
What will you make with this delectable Chipotle Parmesan Spread?
- 1 stick soften butter
- 7-ounces crème fraîche
- ½ cup grated fontina cheese
- 1½ cup freshly grated parmesan cheese
- 2 chipotle peppers, minced
- 1 tablespoon adobo sauce
- 2 teaspoons dried oregano
- Add all ingredients to bowl of a stand mixer or use a hand mixer to whip until throughly combined.
- Store in an air tight container in the refrigerator for up to a month.
