We only have a few weeks before the Big Game! Have you planned out your menu yet? When I asked the casa crew what they wanted to nosh on during the game their immediate and unanimous answer was ribs! We recently had a few racks at a friend’s back yard shindig so they have been craving more. With the beautiful Arizona weather recently who doesn’t want to fire up the grill.
The only problem is we are moving into the new place the week before the game and I know things are going to be absolute madness in the casa kitchen. And grilling is not at the top of my to-do list. The focus this year is on simple recipes with easy cleanup… aka crockpot goodies.
I love when snacks do double-duty as a recipe ingredient; giving you more bang for your buck, so to speak. These yummy Crockpot Pepsi Ribs are so simple and versatile. You use your favorite BBQ sauce during the last 30 minutes of the cooking process.
Growing up my Mom was a die-hard Pepsi fan. I can remember the wooden box sitting on the floor by the fridge, just waiting to collect the empty glass bottles. There was even an old-fashioned bottle opener mounted to the underside of the kitchen counter! She added it to our holiday ham, so it made sense it would be a delicious addition to our ribs.
When I am buying meat for a big party Albertsons is the place to go for great deals. These ribs were marked down and Buy 1 Get 1 Free. Consider them your go-to grocery store for any and all Big Game Party essentials.

Along with the ribs I grabbed Pepsi, Tostitos Scoops, and Tostitos Chunky Salsa. Because every party needs snacks folks and my crew loves their salsa. They are the perfect thing to munch on while the ribs are doing their thing in the crockpot. Just be sure to grab plenty to last the whole game.
The Crockpot Pepsi Ribs were a huge success and deemed worthy of our Game Day spread. Something so simple and delicious seems a little sinful, but this gal is not complaining. I served them with a little extra BBQ sauce because we like them good and messy.

- 3 pounds pork loin back ribs
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup Pepsi®
- 1 cup barbecue sauce
- ½ teaspoon dried thyme leaves
- Spray 4-quart slow cooker with non-stick cooking spray. Cut ribs into 2 or 3 rib portions and place is slow cooker. Sprinkle ribs with salt and pepper and pour Pepsi® over.
- Cover and cook on low for 6-8 hours (until ribs are tender, at least 170ºF)
- Drain and discard liquid from slow cooker. Add barbecue sauce and thyme into crockpot on top of drained ribs and mix so the ribs are coated.
- Cover and cook on low for 30 minutes to 1 hour until ribs are glazed. Serve immediately.
