Boozy Blueberry Carnitas Soft Tacos

When spring gives you an abundance of blueberries you make Boozy Blueberry Carnitas Soft Tacos! Tender pork slow simmered in dark beer and fresh berries then fried until caramelized.
  • For the carnitas~
  • 1 3-pound pork butt or pork shoulder
  • 1 cup dark beer
  • 10 ounces fresh blueberries
  • 3 cloves garlic
  • 1 teaspoon ground chipotle pepper
  • 2 teaspoons kosher salt
  • 2 teaspoons black pepper
  • 3-4 tablespoons canola oil for frying
  • For the pico de gallo~
  • 1 medium tomato, seeded and diced
  • ½ medium onion, diced
  • 1 cup blueberries, roughly chopped
  • 2 tablespoons chopped cilantro
  • Juice of 1 limes
  • Salt and pepper to taste
  1. For the carnitas~
  2. Add all ingredients to a slow cooker. Cook on low 6-8 hours until fall apart tender.
  3. Removed pork from slow cooker. Shred with forks.
  4. Heat a large skillet over medium high heat. Add oil. Fry pork in batches until crispy.
  5. Skim fat off juices in slow cooker. Puree in a blender until smooth.
  6. Toss pork with blueberry sauce.
  7. For the pico de gallo~
  8. Stir all ingredients together in a medium bowl.
