After cooking all day though, the last thing I want to do sometimes is eat. Between tasting new dishes, playing with food, editing pictures of food, etc… dinner feels too much like going to work. My belly needs a break.

Sweet ricotta is one of my favorite treats and fresh thyme from the farmers market took it to the next level. Smear it on toasts, make a sweet quesadilla or top fresh berries with a dollop. It will change you.
How would you use honey thyme ricotta?
- 6 ounces ricotta cheese
- 2-3 tablespoons honey
- 2 tablespoons fresh thyme
- 1 baguette, cut into ½ inch slices
- 2-3 tablespoons extra virgin olive oil
- Mix together ricotta, honey and thyme in a small bowl.
- Lightly brush bread with oil.
- Toast crostini in a large non-stick skillet over medium low.
- Spread ricotta on toast. Top with berries.
