Sweet, spicy and refreshing Pineapple Salsa has sweet chunks of fresh pineapple, savory red peppers, red onion and spicy jalapeno with a hint of lime.
We recently had a delicious Hawaiian Pulled Pork that uses fresh pineapple and I have been crushing on this particular fruit ever since. And not the canned kid. Even though there is definitely a time and place for it. I mean the fresh, kinda prickly kind.
It’s so refreshing in recipes like this Pineapple Salsa. And this stuff is addictive! One bite and you just can’t stop eating it!
You will want to eat it on tacos, with pita or tortilla chips or even just by itself with a spoon. It is that darn good. In fact it inspired a cocktail I am creating soon. Think grilled pineapple and smoky jalapeno with a hint of mint!
The sweetness of the fruit balances perfectly with spiciness of the jalapeno. While lime juice adds the perfect amount of tartness. Next time I am going to grill everything first to add a layer of smokiness!

- 3 cup fresh pineapple, cut into ½ inch pieces
- 1 small red onion, diced
- 1 small red bell pepper, diced
- 1 jalapeno, seeded and finely diced
- Juice of 1 lime
- Add all ingredients to a medium bowl, stir to combine.
