The best part of entertaining in our new home in Ohio is combining popular midwest games and activities with spicy eats inspired by my husband’s Mexican-American culture. It’s the perfect party mashup all our friends love! Since moving here Paul has become a cornhole fanatic so he is organizing a tournament among our friends for the cookout. He even made a half regulation size set we travel with! You can bet I will be competing which means our menu needs to be simple as well as a delicious crowdpleaser!
Tacos al Pastor Recipe
We indulged in authentic Mexican Tacos al Pastor while in Arizona on recent trip to visit family. I knew right away I wanted to recreate the recipe at home with my own twist. Adding Modelo Especial to the pork marinade was a genius idea! Modelo Especial is a crisp, refreshing full-flavored Pilsner-style Lager with hints of orange blossom honey that pair perfectly with the pineapple in the marinade. This beer is brewed with a fighting spirit and has been a part of Mexican culture since it’s beginning in 1925. Since then it is rapidly becoming a favored import beer here in America!
My favorite part about this Tacos al Pastor recipe is you can make a big batch on the grill to feed a crowd. Or you can whip it up in the kitchen for a quick meal during the week. Traditional al pastor is slow roasted on a rotisserie spit to get a crispy, charred taste. We get a similar flavor by cooking strips of marinated pork on the grill or in a cast iron skillet!
Keep the toppings simple so the bold flavor of the pork shines through. Chopped white onion, cilantro, and lime is the classic choice. Or you can try my simple Pineapple Salsa which mirrors many of the flavors in the Tacos al Pastor marinade!
