You folks know that our love of tacos is strong around here. Even before I moved to Arizona all those years ago Mexican dishes were at the top of my list of fave foods. Marrying a born and raised southwest native was completely natural considering he shares my love of all things spicy! We simply can’t live without the bold flavors and fresh ingredients found in Tex-Mex inspired recipes like these better for you 15-Minute Chicken Fajita Cauliflower Rice Bowls.
So first off these bowls are fresh and delicious. Second off Tyson Grilled and Ready® Chicken really make these 15-Minute Chicken Fajita Cauliflower Rice Bowls a cinch to make. Most of the time when we are having fajitas I reach for the Tyson® Frozen Chicken Breasts we stock up on at Sam’s Club. But tbh my latest craving was just too intense. So I set out to make a quicker version! Either way Tyson® products are a great way to add more better for you protein to your meals. Tyson Grilled and Ready® Chicken is my go to for easy salads, sandwich wraps, and of course tacos!
15-Minute Chicken Fajita Cauliflower Rice Bowls
The most labor intensive part of these 15-Minute Chicken Fajita Cauliflower Rice Bowls is slicing your onions and peppers. Unless you save yourself the trouble by using pre-sliced veggies from the produce department.
Frozen cauliflower rice and corn are another time saver. Basically you cook the onions and peppers on the stove while the ‘rice’ and corn cook in the microwave. Add fresh lime juice and chopped cilantro to the cauliflower rice for extra flavor!
Then toss the chicken in a little of my Homemade Taco Seasoning Mix before heating it in the same skillet as the veg.
