  1. Prepare frozen cauliflower rice according to package directions.
  2. While cauliflower rice cooks heat 2 tablespoons oil in a large skillet over medium high heat. Add onions and peppers. Cook 3-4 minutes until charred and slightly soft. Set aside.
  3. Toss chicken with taco seasoning mix. Cook according to package directions, approximately 5-6 minutes. Add more oil to skillet if needed.
  4. Prepare beans and corn while chicken cooks. Set aside.
  5. Once cauliflower rice is cooked, mix in juice of 2 limes and chopped cilantro. Slice remaining limes into wedges for garnish.
  6. Divide cilantro lime cauliflower rice between 4 bowls. Top each with a serving of chicken plus desired amounts of remaining ingredients. Garnish as desired, serve hot.
Recipe Notes

Tip- To thaw frozen corn place in the colander along with the beans. Run under hot water for approximately 30 seconds to rinse and thaw. Shake off excess water before using!

Time Saver- Substitute pre-sliced onions and peppers from the produce department of the grocery store.
