Creamy Poblano Garlic Vinaigrette

roughly chopped poblano pepper
approximately half a medium sized pepper
fresh lime juice
minced red onion
extra virgin olive oil
Salt and pepper
Add all ingredients, except oil to a food processor or blender. Pulse to finely chop.
Drizzle in oil to reach desired consistency. Salt and pepper to taste.
Dressing can be store in an airtight container in the refrigerator for 2-3 weeks. Shake thoroughly before serving.
