Preheat oven to 425 degrees. Line a large baking sheet with aluminum foil.
Pat chicken dry with paper towels and place on the baking sheet.
Rub chicken with olive oil. Generously season with salt and pepper.
Roast chicken at 425 degrees for 15 minutes.
Turn oven temperature down to 375 degrees. Continue to cook chicken approximately 25-35 minutes or until internal temperature reaches 160 degrees.
Remove chicken from oven. Let rest for 10 minutes before serving.
Internal temperature for chicken is 165 degrees. Chicken will continue to cook once you remove it from the oven and let it rest. To get skin extra crispy, place baking sheet under your oven’s broiler for 1-2 minutes.
