Easy Roast Chicken Quarters

  1. Preheat oven to 425 degrees.
  2. Pat chicken dry with paper towels. In a small bowl mash together garlic and thyme. Rub chicken with garlic, place garlic under skin if desired.
  3. Place chicken in a large cast iron skillet or baking sheet. Drizzle chicken with olive oil. Generously season with salt and pepper.  
  4. Roast chicken at 425 degrees for 15 minutes.
  5. Turn oven temperature down to 375 degrees. Continue to cook chicken approximately 25-35 minutes or until internal temperature reaches 160 degrees.
  6. Remove chicken from oven. Let rest for 10 minutes before serving.
Recipe Notes

Internal temperature for chicken is 165 degrees. Chicken will continue to cook once you remove it from the oven and let it rest. To get skin extra crispy place under your oven’s broiler for 1-2 minutes.
