My one big indulgence when making these Greek Turkey Burgers is the feta mayonnaise. It’s like an amazingly tangy spread that acts like food glue. We love feta cheese partially for it’s crumbly texture. Realistically you just can’t keep it from falling off a burger though. So I mixed it with a little mayo to keep it all together. Fresh basil and sun dried tomatoes add even more layers of flavor. Plus it’s the most complicated part of this burger recipe. I mashed the mixture with a fork in a bowl for a chunky texture. If you want a smoother spread then pulse the ingredients together in a food processor.
