College football season starts in about two weeks and I am so ready for cooler weather, warm sweaters, and obnoxiously good tailgate recipes. We live in Buckeye country amongst some of the most diehard football fans. Oh, who am I kidding, they are THE most diehard fans imaginable. And we love every minute of it!
Chipotle Mustard Beer Brats Recipe
Last weekend I whipped up a practice round of this Chipotle Mustard Beer Brats recipe in anticipation of our first official midwest tailgate experience at the end of the month. The weather in Columbus has been gorgeous so Paul and I loaded up our new Coleman cooler, grabbed a few outdoor essentials, and headed for a nearby park to enjoy lunch.
The great thing about this recipe is you can prep your brats ahead of time, then finish them off by simmering in the chipotle mustard sauce the day of your tailgate. I topped the brats with a spicy ranch dressing and chopped cilantro. A perfect compliment to the tangy sauce!

So this Chipotle Mustard Beer Brats Sliders recipe came about because I polled my FB friends asking what everyone’s favorite tailgate food its. The responses ranged from a good Blood Mary to sausages with onions and peppers. In fact we had a lively discuss about the best way to prepare beer brats.
The secret is to grill your brats FIRST, then simmer them in beer with onions and such. Naturally the whole idea needed my signature southwest spin! I make a mean Chipotle Michaleda so I know the chipotle – beer combo works. Mustard gives it tanginess and a touch of honey balances it all out.
I kept things simple by simmering the brats with onions in the sauce. The longer it bubbles along, the richer the sauce will be. You could also make this recipe in a slow cooker for your homegating parties. These mini sub rolls are the perfect size for half a brat and really made it easier to eat these guys. Next time I want to slice the brats into pieces and serve on skewers, the perfect tailgate small bites!
