Chipotle Mustard Beer Brats Recipe
  1. Melt butter in a large skillet or Dutch oven over medium low heat. Add onions, cook for 10 minutes stirring occasionally.
  2. Stir chipotle peppers, mustards, honey, and garlic. Cook 4-5 minutes. Add 1/2 cup beer, stir to combine.
  3. Preheat grill or grill pan to medium high heat. Add brats, sear 2-3 minutes on each side.
  4. Place brats in skillet with onion mixture. Add enough beer to just cover brats.
  5. Simmer for 15-20 minutes until brats are cooked through and sauce reduces.
  6. In a small bowl combine ranch dressing, cayenne pepper, and hot sauce. Adjust seasonings for desired heat level.
  7. Serve on toasted buns with caramelized onions, spicy ranch, and chopped cilantro.
