Chipotle Mustard Beer Brats Recipe
thinly sliced root to stem
diced chipotle peppers in adobo sauce
-for less heat use only adobo sauce
spicy brown mustard
adjust for desired tanginess
Salt and peper to taste
Buns for serving
Melt butter in a large skillet or Dutch oven over medium low heat. Add onions, cook for 10 minutes stirring occasionally.
Stir chipotle peppers, mustards, honey, and garlic. Cook 4-5 minutes. Add 1/2 cup beer, stir to combine.
Preheat grill or grill pan to medium high heat. Add brats, sear 2-3 minutes on each side.
Place brats in skillet with onion mixture. Add enough beer to just cover brats.
Simmer for 15-20 minutes until brats are cooked through and sauce reduces.
In a small bowl combine ranch dressing, cayenne pepper, and hot sauce. Adjust seasonings for desired heat level.
Serve on toasted buns with caramelized onions, spicy ranch, and chopped cilantro.
