  1. Heat over to 400┬░F.
  2. Place potatoes and pears cut side down on a foil lined baking. Drizzle with oil. Roast until tender, approximately 20 minutes.
  3. Remove from oven, cool slightly. Remove flesh from pears and discard skins.
  4. Place potatoes and pear flesh in a large sauce pan over medium low heat. Add broth and seasonings. Puree with an immersion blender. Adjust amount of broth for desired consistency. Simmer 5 minutes to warm. Salt to taste.
  5. Garnish with coconut cream, pesto, and toasted pepitas.
