I recently asked my Facebook audience how they like their eggs cooked and was surprised by the strong reactions. Apparently egg preparation is a very personal preference, one that most folks don’t waiver on. For years eggs didn’t agree with me so I avoided them. Then I tried local eggs from the farmers market, had a positive experience and haven’t looked back. Lately I have been craving fried egg sandwiches, gotta make up for lost time!
This recipe came about while Mr. B and I were discussing all the different dishes we could top with an egg. Steak is always a winner in his book. I am the veggie pusher. This was a yummy compromise! I used a thinly cut sirloin but you could easily substitute flank or skirt steak. If you want to make the process even simpler, use thinly sliced deli roast beef instead. Keep the steak seasoning simple so you can really taste the meatiness, it balances well with the herby cream cheese.
This was our first time trying Kerrygold Blarney Castle cheese and the whole family was pleasantly surprised. The kid even requested it in my next batch of mac-n-cheese! It is extremely smooth with a sweet buttery texture that compliments the peppery arugula and caramelized tomatoes.
