Sun Dried Tomato Basil Chicken Calzone

extra virgin olive oil
plain or flavored as desired
sun dried tomato salad dressing
chopped sun dried tomatoes
grated fontina cheese
grated Parmesan cheese
chopped cooked chicken
prepared pizza crusts
Salt and pepper to taste
Preheat over to 425°F. Line a large backing sheet with parchment paper. Set aside.
Heal oil in a large skillet over medium heat. Add onion and sauté 1-2 minutes. Mix in garlic, cook 2 minutes.
Add spinach, balsamic vinegar, and chicken stock to skillet. Cook until greens are wilted. Remove form heat, set aside to cool.
In a large bowl mix together cheeses, dressing, chicken, and cooled spinach. Add basil and stir to combine completely.
Place pizza crust on parchment paper. Spoon half of filling onto one side of the dough. Fold dough over the filling to create a half moon shape. Twist edges of dough to seal. Transfer to baking sheet.
Repeat with remaining pizza crust and filling. Cut slits in top of dough.
Beat egg with a little water in a small bowl. Brush pizza dough with egg wash.
Bake calzones for 17-20 minutes or until golden brown.
Let cool 5 minutes before cutting. Serve warm with marinara.
