Tex Mex Chili Recipe
extra virgin olive oil
green bell pepper
red bell pepper
lean ground beef
substitute ground turkey or chicken
spicy marinara sauce
black bean and corn salsa
chicken or vegetable stock
drained and rinsed
Salt and pepper to taste
Heat oil on high heat in a large Dutch oven.
Add onions and peppers, cook 2-3 minutes to slightly char. Turn heat down to medium high, add garlic and fajita seasonings. Cook 2-3 minutes.
Push vegetables aside and add ground beef. Beak up with a wooden spoon or spatula. Cook 5-6 minutes until browned.
Stir in remaining ingredients. Bring to a low boil, reduce heat and simmer 30 minutes. Salt and pepper to taste. Serve hot with desired toppings.
