So Paul and I are putting our focus towards new experiences, compiling a list of activities we have the freedom to enjoy now! The foodie in me wants to check out food trucks and wine tastings while he is ready to unplug for a weekend camping.
And as a surprise to celebrate our empty nest my wonderful husband signed us up for dance lessons! I can’t wait to get that sexy man on the dance floor.

First off this is not a complicated recipe, it just looks like it.
I skimmed the ingredient list and directions, set everything out then wavered between overconfidence and wariness.
Casa Kitchen Tips
This dish comes together super quick once you get going. Boiling water for the glass noodles takes longer than anything else. Have a glass of wine handy to sip while you wait because you don’t want to start the sauce yet.
Or better yet, read the directions again. I skimmed remember; which is why there is very little cilantro garnish. I gleefully and unknowingly added all of it to the sauce instead.
Give yourself the luxury of slowing down to savor the moment. Notice the pretty green lime in the picture above? Poor guy isn’t in the after-pictures because I wasn’t paying attention and failed to put him on our final plate.
When you rush, you miss out on little experiences that can make a big impact!
So don’t forget the lime folks. Life needs a twist!
