My childhood summers were about gathering the neighborhood together for big family cookouts. We would build a big bonfire that attracted friends from blocks away. People would show up with food to share, looking for conversation and a little relaxation.
Earlier this year we moved into a new neighborhood that is very social so Paul and I have been entertaining more than ever. There are only a few more weeks before the kid leaves for basic training and we are cramming as many memories into the summer as possible.
Last weekend the neighbors invited several families on the block over for a summer cookout/potluck. I get a lot of good-humored pressure when it comes to cooking for block parties because everyone knows about the blog.
My favorite part of being a foodie is dreaming up new recipe ideas but it can be a challenge sometimes.
My best time for inspiration is when I am shopping, simply wandering the aisles waiting for my creative juices to flow. Saturday we stumbled across a Summer Block Party Event while stocking up on summer essentials like Swanson Broth at Sam’s Club.
It was the first Saturday in weeks that Paul was home and it was nice to have him with me, we can get lost in that place!
The gals at the demo were a real hoot, chatting with us about the different products they were sharing. I don’t make many recipes with quinoa and they got me hooked on using truRoots Quinoa for my potluck dish that night. I like that it is Certified USDA Organic and Non-GMO Project Verified. - ½ cup truRoots quinoa
- ¾ cup Swanson chicken broth
- ½ cup Pace medium salsa
- 2 cups chopped cooked chicken
- 1 cup fresh or frozen corn
- 1 can black beans, drained and rinsed
- 1 small green bell pepper, diced
- Chopped cilantro
- Lime wedges for garnish
- Mole Vinaigrette
- Place chicken broth, salsa and quinoa in a medium sauce pan, bring to a low boil.
- Cover, reduce heat to low and simmer 15 minutes.
- Stir in chicken, corn, beans and peppers.
- Top with cilantro, vinaigrette and a squeeze of lime.
- Serve immediately or chill until ready to serve.
