On busy week days I like to keep lunch light with salads, smoothies and lighter pastas like this Spicy Spinach Pesto Pasta. I have been prepping for my Cinco de Mayo cooking segment on A to Z Life, Channel 3TV tomorrow which means I have less time than usual to get my work done.
The Spicy Spinach Pesto I made last week is delicious tossed with pasta, hot or cold. I actually prefer most of my pesto pastas chilled or room temperature. Which is helpful since I have a habit of making lunch then completely forgetting about it!
I made a simple salad and dressed it with my Ultimate Italian Vinaigrette. It’s my take on the house dressing at our local pizza joint. Nothing to fancy, just simple-to-make, full-of-flavor goodies!
Stick to seasonal salad fixings, they are going to be more nutrient dense not to mention less expensive! And if you can buy at your local farmers market all the better. Keep your dollars within the community.
This pesto is really good as a dip, slathered on a turkey panini or as a dressing for roasted spring veggies like zucchini and squash! It is a hearty pesto so pair it in recipes where it can really shine. Every time I make a batch new ideas pop into my head, it would be fantastic as a chimichurri over steak or grilled pork chops.
