The kid only has 1 semester of high school left so we are counting down to graduation. Between school, his new job and spending time with his friends it feels like we rarely see him anymore. It blows my mind he is so grown up and on the verge of starting his own life away from us. As parents we spend years taking care of our children, worrying about them, hoping they are safe and happy. Then all of a sudden you turn around and those little kids aren’t so little anymore. And you realize the years of fixing boo-boos, kissing away tears and cheering them on was the easy part. Now we have to trust they can take care of themselves. I’m a little teary-eyed just thinking about it all… It in a world full of drive-thrus, take out and fast food I get concerned about the food choices the kid is faced with. It helps to know he can cook simple dishes like this Italian Chicken and Spinach Pasta Skillet for himself once he is out on his own. For the last several years I encouraged him to spend time in the kitchen, learning basic cooking skills. One way to engage him when he was younger was to play a little game where we each grab 2-3 ingredients from the fridge and pantry then make up a dish them. It was our version of a popular competitive cooking show we like *wink*
