Don’t you love when a difficult sounding recipe ends up being super easy to make? Lately those have been my go-to lunch ideas. Leftover chicken is a kitchen staple for many of us. Luckily this delicious salad is a great way to utilize those leftovers.
Barbecue Chicken Chopped Salad
Sure I cook from scratch, it kinda goes with the food blogging territory. But I’m like anyone else and sometimes you just need a few shortcuts. Chicken is a great protein to use in a variety of convenience recipes. Leftover rotisserie chicken, or the frozen precooked stuff are easy options. Maybe try buying chicken breasts in bulk when they are on sale. Then you can precook and freeze your own.
Either way the exciting part of this Barbecue Chicken Chopped Salad is the vinaigrette. I had a craving for barbecue chicken, but my bird was already cooked. It is tough to season meat after the fact. So my solution was the make a Sweet Tangy Barbecue Vinaigrette instead. You get all the barbecue flavor you love, but in a convenient way. This vinaigrette also makes a great marinade for chicken or pork when you have time to fire up the grill. Brush it on veggies for a smoky kick too.
Fresh corn, peppers, and tomatoes are so summery which makes them the perfect ingredients in this salad. Next time I want to whip up this recipe from scratch and take the time to grill the veggies too. Asparagus and caramelized onions are yummy additions too.

Sweet Tangy Barbecue Vinaigrette
Barbecue Chicken Chopped Salad
Ingredients
- 2 cups chopped green leaf lettuce
- 1 cup chopped radicchio
- 1/2 cup chopped cooked chicken
- 1/4 cup cooked corn
- 1 small tomato chopped
- 1/2 small green bell pepper chopped
- Barbecue Vinaigrette desired amount
Instructions
- Toss lettuce and radicchio together in a large bowl.
- Top with remaining ingredients.
- Drizzle with desired amount of Sweet Tangy Barbecue Vinaigrette.
