Lemongrass recently made an appearance in the casa kitchen and I have been incorporating it into everything possible. It has a refreshing lemon-lime flavor with a hint of mint and ginger. Everything a yummy blackberry mojito needs!
Blackberry Lemongrass Mojito
Ever since Mr.B started working remotely the casa has become the hottest hang out in the cul de sac. I swear we now have a revolving front door, there are always people dropping by to visit and hang out. Naturally I use our friends as my personal culinary guinea pigs! I love to throw together quick snacks and inventive beverages like this refreshing Blackberry Lemongrass Mojito recipe for everyone to try out. One of my favorite last minute entertaining concepts is a good fondue. I love that you can switch it up in a million different ways & it keeps everyone gathered together. Most people already have everything they need in their pantry/fridge for an impromptu fondue party. I don’t even worry about not having a fondue pot, a small crockpot and bamboo skewers are a wonderful substitute.
Sometimes I will make a traditional cheese fondue, usually using up the various cheesy odds and ends lingering in the fridge, other times I like to make a sweet fondue with whatever chocolate I have on hand. Fruits, veggies, breads, dried meats and other snack items are perfect for dipping. Add in your favorite cocktail, like my new Blackberry Lemongrass Mojito and you have an instant party. Blackberry Lemongrass Mojito
- For the simple syrup~
- 1 cup water
- 1 cup sugar
- 2 stalks lemongrass white part only
- For the cocktail~
- 4-5 fresh blackberries
- 3 fresh mint leaves
- 1 ounce lemongrass simple syrup
- 1 ounce fresh lime juice
- 2 ounces light rum
- Crushed ice as needed
- Ginger ale
- Lime slices
- Mint leaves
- For the simple syrup~ Roughly chop lemongrass stalks. Add to a saucepan with water and sugar. Bring to a low boil until sugar dissolves. Remove from heat and cool completely. Strain out lemongrass stalks. Store leftovers in an airtight container in the refrigerator.
- For the cocktail~ Add blackberries, mint, simple syrup and lime juice to a glass. Gently muddle to release flavors. Fill glass with ice. Pour in rum and stir briefly to combine. Top off with ginger ale, garnish with a mint leaf and lime slice. Serve immediately.
