Chocolate Cherry Vanilla Float Popsicles
We have been making a lot of soda floats this summer, experimenting with different flavor combos. One of my favorite is a mix of chocolate, cherries and vanilla. There is just something about it that makes my taste buds happy.

I knew they would also be gorgeous in popsicle form too. Just search for popsicles on Pinterest and you will see what I mean!
See how the chocolate chips are falling off the top of the popsicle? When I first made them I drained the cherries trying to keep the layers clean and separated. What I failed to think about was what was going to make the chocolate chips stick together.
What I should have done was let the cherry juice do that job. So when you are chopping your cherries, save all that luscious juice. And play around with how sweet you make the yogurt layer. The soda is going to be on the sugary side so I went a little less sweet to balance it out.
And speaking of soda, let it sit out for a little while so it isn’t so carbonated. You want some bubbles because that’s part of what makes these Chocolate Cherry Vanilla Float Popsicles so much fun! And leave a little room at the top because the soda will expand.
What is your favorite kind of soda float?
- ½ cup mini chocolate chips
- 1 cup roughly chopped fresh cherries with juice
- 2 cups vanilla Greek yogurt
- 1-2 tablespoons honey
- Vanilla soda
- Starting with the chocolate chips, layer desired amounts of each ingredient into popsicle molds. Substitute paper cups if needed.
- Freeze until solid.
