They go great with Coca-Cola Effortless Meals at Walmart, perfect for busy families on the go! Being the Lazy Man has its perks. My wife spoils me and all I have to do is stay on top of my honey-do list…babe, I promise I’m getting better at checking things off that list. She typically prepares all our meals because my idea of gourmet is meatloaf and fish tacos (inside joke). We were grasping for creative ideas when it came to grub. I am not much of a cook outside of a few basic dishes (and dessert!) plus it’s too expensive to go out for every meal. There is usually an array of leftovers in the fridge, but my son is a picky eater. We only get one weekend a month together and the last thing I want is to fight with him about what to eat. We elected to forage at the local Wal-Mart for dinner supplies and discovered the Effortless Meals section near the deli. They had just what these two guys needed… pizza, soda, sandwiches and even a chicken rotisserie meal with a choice of potato salad, macaroni salad or cole slaw. Effortless Meals are convenient to purchase, help provide healthy, fresh options for dinner during back-to-school, and create a positive mealtime experience for your family. I grabbed a 16” Pepperoni Pizza and two 2-liters of Coke for dinner plus two 6” Marketside sandwiches for lunch on Sunday, a New York deli for me, ham and cheese for mini-me. The sandwich meals are cool because they come complete with potato chips and a 16oz. Coke. Score! He had a hand in picking everything out, so it was a win/win! We were in and out in 10 minutes flat. Saturday night I put the pizza in the oven at 400 degrees for 18 minutes (give or take) then we ate over a movie. Afterwards, we settled into fighting the forces of evil on the Xbox until we got the urge for something sweet. I may not be much of cook but dessert is my thing. We made mug cakes, something this Lazy Man has (somewhat) mastered. Very simple recipe, you have to wing it until you get the hang of it. Practice makes perfect, right? All you need is a few pantry ingredients, a liquid of some kind and a microwave. Different liquids produce different results so cooking times may vary. The size of the mug matters, too. You can even add fun stuff like chocolate chips, sprinkles, hazelnut spread, etc. For this recipe I used Coca-Cola for the liquid and added peanut butter because the mini-me and I both LOVE peanut butter. Pour a glass of milk and BOOM! Instant-love-in-a-cup. All in all, the weekend was a success. My son was satisfied with the food, we got to spend some quality time together and no one was hurt except several random virtual zombies. Chocolate Coca-Cola Mug Cakes
- 1/4 cup all purpose flour
- 2 tablespoon cocoa powder
- 2 1/2 tablespoons sugar
- 1/8 teaspoon baking powder
- 1/3 cup Coca-Cola
- 1 1/2 tablespoon canola or vegetable oil
- Add all ingredients to a 14 ounce mug. Mix throughly until lumps are gone. Drop any add-ins into batter, do not stir in! Microwave 1 minute*. Serve immediately.
- Microwave ovens vary, adjust cooking time as necessary.
