Last Minute Entertaining Ideas~ Caliente Chicken Spaghetti

Caliente Chicken Spaghetti
  • 2-3 tablespoons extra virgin olive oil
  • ½ pound caliente or spicy chicken sausage
  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 14.5 ounce can stewed tomatoes, Mexican flavor
  • 1 pound box no-boil spaghetti
  • 3 cup chicken stock
  • Salt and pepper to taste
  1. Heat oil in a covered skillet or Dutch oven over medium high heat.
  2. Add sausage, break up and cook 3-4 minutes.
  3. Add onions, peppers and garlic, cook 2-3 minutes.
  4. Stir in stewed tomatoes.
  5. Add pasta to pan.
  6. Pour in stock, make sure if fully covers pasta.
  7. Cover and turn to high. Cook covered 10 minutes.
  8. Removed lid and toss pasta with sauce. Cook 2-3 more minutes to adjust consistency.
