AD Sweet Chipotle Cornish Hens

Take your Friendsgiving menu to a new level with these Sweet Chipotle Cornish Hens and roasted seasonal vegetables. Pair this simple, yet elegant dish with your favorite red wine for a festive holiday meal.
  • 4 Cornish hens
  • 6 tablespoons, softened
  • 2 tablespoons chipotle chili powder
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • ½ tablespoon black pepper
  • 1 large sweet potato
  • 1 medium Idaho potato
  • 1 small yellow onion
  • 1-2 green apples
  • 2 medium carrots
  • 2-3 tablespoons extra virgin olive oil
  • ¼ cup brown sugar
  • 2 tablespoons red wine
  • Fresh chopped parsley for garnish
  1. Preheat oven to 425 degrees F. Line 1-2 large baking sheets with foil, set aside.
  2. Use a pair of kitchen shears to remove backbones from Cornish hens, discard bones.
  3. Lay birds breast side up on baking sheets.
  4. Rub each Cornish hen with 1 tablespoon butter.
  5. In a small bowl combine spices. Sprinkle each bird evenly with spice mix.
  6. Cut vegetables into ½ inch pieces. Spread evenly around Cornish hens, drizzle with olive oil. Generously salt and pepper.
  7. Bake 10 minutes, reduce heat to 350. Bake 40-45 minutes until cooked through.
  8. Heat butter and brown sugar in a small sauce pan over medium low heat until bubbly. Stir in wine, reduce heat to low and simmer 5 minutes.
  9. Brush Cornish hens with glaze during last 10 minutes of roasting.
  10. Garnish vegetables with fresh parsley and serve hot.
