Serve chilled for a decadent treat. It is the time of year when I start to miss the crisp, colorful fall season I grew up with in the Midwest. My family would take drives on the weekend to see the changing foliage, stopping to buy fresh produce from roadside stands; playing tourist. My mom would take me to a small wildlife refuge where we would watch bald eagles majestically flying overhead, foxes hunting on the frozen lake and families of deer visiting the salt lick. Scents always help invoke feelings and memories for me, especially in the fall when fragrances are crisp like a cool autumn day or warm and inviting with hints of spice. Lately the casa kitchen has been full of holiday recipes for the blog so while shopping at Fry’s for ingredients, I looked for candles to get me in the fall mood. Visit here for more fragrance inspiration. While working on this Honey Mascarpone Plum Tart, Paul and I reminisced about how we spent our childhood holidays. My family was usually pretty solitary with occasional visits to little known, distant relatives while he grew up in a large, ever-present extended family. Our differences are what help keep us balanced and create diversity in our family. I love elegant, simple recipes. This tart has 5 ingredients, yep… only 5. Pie crust, mascarpone cheese (an Italian cream cheese), whipped cream cheese spread, honey and plums. The amounts in the recipe are based on my rectangle tart pan which is 14″x 4″x 1″. If you use a different pan adjust the measurements as needed. If you don’t have mascarpone substitute cream cheese and thin it out with a little heavy cream. Don’t over mix the filling or it will curdle. Everything is room temperature and easy to mix by hand. Change up the toppings too. There are all kinds of gorgeous stone fruits available right now. I also wish I had added a pinch of cayenne pepper to filling, give it a little kick to balance out the sweetness. Share your favorite fall fragrance inspired memory in the comments. Honey Mascarpone Plum Tart
- 1 14-ounce package prepared pie crust 2 crusts per package
- 8 ounces mascarpone cheese room temperature
- 4 ounces whipped cream cheese
- 1 tablespoon honey plus more for garnish
- 1 plum pitted and cut into 1/4 inch thick slices
- Preheat oven to 450 degrees. Line desired tart pan with pie crust, overlapping and sealing where necessary.
- Blind bake crust according to manufacturers directions. Cool completely.
- In a bowl stir together mascarpone, whipped cream cheese and honey. Adjust amount of honey as necessary.
- Spoon filling into baked tart shell, smooth with a spatula. Chill at least 30 minutes.
- Top with sliced plums and drizzle with honey.
