Many of the gals I know are self-employed moms and we work long, crazy hours. Every few weeks we try to gather for an evening of gossip, brainstorming and of course cocktails! One of the girls had a bottle of Arbor Mist Blackberry Merlot and I was smitten after the first sip. I love fun, easy drinks that are full of flavor. Recipe ideas danced in my thoughts the rest of the evening! When I got to the store I discovered there are quite a few Arbor Mist flavors available. I immediately grabbed a bottle of Peach Moscato, Strawberry Mango Moscato and Cherry Moscato. Yes, I like Moscatos… in fact I am enjoying a glass of Strawberry Mango as I type. *happy sigh* Ok, back to the dessert. Parfaits are adorable and easy and everyone loves them. They are also versatile. Easily multiple the recipe depending how many guests you have. I made 4 really good sized parfaits but the number you get will depend on the containers you serve them in. You can easily change the flavor profile of this dessert with your favorite Arbor Mist wine and add-ins. In my version peach flavors combined with whipped creamy and crunchy granola reminds me of long, lazy summer days and fresh from the oven peach pie. *more sighs* What are your summer plans? Peach Wine Parfaits
- 2 3-ounce boxes peach flavored gelatin
- 1 cup water
- 1 750ml bottle peach wine
- 12 ounces frozen peaches
- 1 8-ounce tub whipped topping
- 1-2 cups bulk granola
- Add gelatin to a 9 x 13 baking dish. Microwave water until just boiling. Whisk boiling water into gelatin until completely dissolved. Whisk in 2 cups wine. Chill according to package directions until firm.
- Place frozen peaches in a bowl; pour remaining wine over peaches. Chill until peaches are thawed. Drain fruit and roughly chop.
- Layer gelatin, chopped peaches, whipped topping and granola in preferred order in containers such as mason jars or wine glasses. Made ahead of time and chill until ready to serve or serve components separately for a make-your own option.
