We recently had a delicious Hawaiian Pulled Pork that uses fresh pineapple and I have been crushing on this particular fruit ever since. And not the canned kid. Even though there is definitely a time and place for it. I mean the fresh, kinda prickly kind. One bite and you just can’t stop eating it! You will want to eat it on tacos, with pita or tortilla chips or even just by itself with a spoon. It is that darn good. In fact it inspired a cocktail I am creating soon. Think grilled pineapple and smoky jalapeno with a hint of mint! Fruit salsas like my Peach and Tomato Salsa are a great way to mix up your typical taco topping. I even made a blueberry pico de gallo recently to go on top of Boozy Blueberry Carnitas Soft Tacos. The sweetness of the fruit balances perfectly with spiciness of the jalapeno. While lime juice adds the perfect amount of tartness. - 3 cups fresh pineapple cut into 1/2 inch pieces
- 1 small red onion diced
- 1 small red bell pepper diced
- 1 small jalapeño pepper seeded and finely diced
- Juice of 1 lime
- Add all ingredients to a medium bowl, stir to combine.
