The Pulled Pork Bar I created for Cost Plus World Market last year was the inspiration for this year’s Tex Mex Chili Cheese Nacho Bar!
Tex Mex Chili Cheese Nacho Bar
My Tex Mex Black Bean Chili recipe made with Cost Plus World Market Chipotle Black Bean + Corn Salsa is at the heart of this halftime friendly spread. You will drool over this southwest inspired chili recipe full of beef and savory vegetables. The hearty texture makes it the perfect nacho topping along with fresh vegetables.
I made this recipe with ground beef, but you could substitute turkey or chili for a leaner version. Or you could even omit the meat all together for a heart veggie version, just add in extra black beens!

- Chipotle Black Bean Salsa
- Marinara sauce

If you are like me then you will want to dip your favorite lime tortillas chip from Cost Plus World Market into a bowl of chili with a healthy drizzle of my easy 3 Cheese Queso swirled in. Guests looking to get wild and crazy with a healthy twist will love making a hearty taco salad topped with chili, fresh vegetables, and crushed tortillas chips. tbh the options really are endless. You could even have a halftime contest to see who makes the most inventive dish!
Offer a variety of fresh toppings like chopped tomatoes, red onions, cilantro, and cabbage. This spread really is a veggie lovers dream! We like to pickled vegetable options too which you can find at Cost Plus World Market. I would offer up a healthier version of the 3 Cheese Queso but come on folks, it’s cheese! lol Just don’t forget the extra sauces.
To make the 3 Cheese Queso grate the jalapeno jack cheese, then mix it with the nacho cheese sauce and 1/2 cup of the three cheese blend. Stir in 1 tablespoon fajita seasoning and 1/2 cup salsa. Melt it all together in a cast iron dish on the stove top or in the oven. The cast iron will help the sauce retain it’s heat when you serve it.

Tex Mex Chili Recipe
- 3 tbsp extra virgin olive oil
- 1 medium onion diced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 4 cloves garlic minced
- 3 tbsp fajita seasonings
- 1 pound lean ground beef substitute ground turkey or chicken
- 2 tbsp lime juice
- 2 cups spicy marinara sauce
- 1 16-ounce jar black bean and corn salsa
- 2 cups chicken or vegetable stock
- 1 14-ounce can black beans drained and rinsed
- 1 cup frozen corn
- Salt and pepper to taste
- Heat oil on high heat in a large Dutch oven.
- Add onions and peppers, cook 2-3 minutes to slightly char. Turn heat down to medium high, add garlic and fajita seasonings. Cook 2-3 minutes.
- Push vegetables aside and add ground beef. Beak up with a wooden spoon or spatula. Cook 5-6 minutes until browned.
- Stir in remaining ingredients. Bring to a low boil, reduce heat and simmer 30 minutes. Salt and pepper to taste. Serve hot with desired toppings.
