Classic Salade Niçoise Recipe

  • 6-8 small red potatoes boiled and quartered
  • Fresh green beans blanched
  • 2 cups fresh arugula
  • 1 cup tuna
  • 1 cup cherry tomatoes sliced in half
  • 1/2 cup large diced cucumber
  • 1/2 cup niçoise olives
  • 1/4 cup sliced radishes
  • 2 hard boiled eggs cut in half
  • 2 tbsp Dijon mustard
  • 1 tbsp minced shallot
  • 3 anchovy filets finely minced + more for the salad if desired
  • 2 cloves garlic finely minced
  • Juice of lemon
  • 1 tsp caper brine
  • 2 tsp anchovy oil
  • 1/4 cup extra virgin olive oil
  • Chopped fresh dill for garnish
  • Capers for garnish


  • Layer salad ingredients as desired on a large platter.
  • In a small bowl whisk together Dijon mustard, shallot, garlic, mince anchovy, lemon juice, and caper brine. Drizzle in extra virgin olive oil, continue whisking until completely combined.
  • Drizzle vinaigrette over salad. Garnish with chopped dill and capers.
