Chorizo Apple Dressing
Dress up your holiday menu with this Chorizo Apple Stuffing full of spicy pork chorizo, seasonal apples and aromatic vegetables.
- 2 tablespoons extra virgin olive oil
- 1 pound pork chorizo
- 2 large sweet red apples diced
- 2 ribs celery diced
- 1 large green apple diced
- 1 small yellow onion diced
- 3 cloves garlic minced
- 8 cups dried cubed challah bread
- 2-3 cups unsalted chicken stock
Preheat oven to 350 degrees.
Heat oil in a large skillet over medium heat.
Add chorizo, break up with a wooden spoon or spatula. Cook 4-5 minutes, set aside on a plate.
Pour off excess fat, leaving 1-2 tablespoons in skillet.
Add apples, celery and onion, saute 3-4 minutes. Stirring occasionally.
Mix in garlic, cook 1-2 minutes. Season with salt and pepper.
Remove form heat, pour into an extra large bowl.
Stir in bread, chorizo and apple mixture.
Add enough chicken stock to soak bread.
Spoon mixture into a butter casserole dish.
Bake 35-45 minutes until cooked through.
