Blackberry Lemongrass Mojito

Springtime blackberry mojito with a minty hint of lemon-lime and ginger

  • For the simple syrup~
  • 1 cup water
  • 1 cup sugar
  • 2 stalks lemongrass white part only
  • For the cocktail~
  • 4-5 fresh blackberries
  • 3 fresh mint leaves
  • 1 ounce lemongrass simple syrup
  • 1 ounce fresh lime juice
  • 2 ounces light rum
  • Crushed ice as needed
  • Ginger ale
  • Garnish~
  • Lime slices
  • Mint leaves


  • For the simple syrup~ Roughly chop lemongrass stalks. Add to a saucepan with water and sugar. Bring to a low boil until sugar dissolves. Remove from heat and cool completely. Strain out lemongrass stalks. Store leftovers in an airtight container in the refrigerator.
  • For the cocktail~ Add blackberries, mint, simple syrup and lime juice to a glass. Gently muddle to release flavors. Fill glass with ice. Pour in rum and stir briefly to combine. Top off with ginger ale, garnish with a mint leaf and lime slice. Serve immediately.
